Food in Okinawa is different from any other Japanese original dishes. It's rather Ethnic and closer to Taiwanese I think. I remember that I often saw this kind of food display in Chinatown in Vancouver. It looks grotesque for me and most of Yamaton-chu (Okinawanese term which means any other Japanese people outside Okinawa), but I don't think they are barbarous or uncivilized. What's the difference from our fish displays or stuffed deers which we are familiar with? Logically I understand that, but I'm not so logical that I can eat this pig's legs or nose. My instinct denies that. I have eaten a stew of giblets and even sliced pig ears, but that is my limit.
I agree, that display is a bit much. My brother- and sister-in-law are stationed in Okinawa and we hope to visit them next year, so I am especially looking forward to your posts this month!
