As I mentioned many times in this blog, Okonomiyaki, a Japanese pancake, is one of my favorite menu items. It can have uncountable variations by changing the combination of the ingredients and toppings. This version of Okonomiyaki has Kezuribushi, dried bonito flakes, on it. It is a very popular topping because it makes the menu item deeper in taste and visually more enjoyable; the paper thin bonito flakes dance on the pancake because of the heat and steam from the pancake body. Sushi, Tempura and Sukiyaki are the three major Japanese menu items and most Western people know them, but Okonomiyaki doesn't seem so popular among them. I think it has the possibility of success in food business in the Western world just the same as Sushi case because it is not less healthy, tasty and enjoyable than Sushi.

I think so,too.When I stayed in Boulder,I cooked it,I called CABBAGE CAKE, for my landlady.But I couldn't get "HANA-KATSUO" there.So she didn't knouw their "Dancing".
